Talitha's Kickin' Salad
(a vegan recipe using a soy-based faux chicken)

1 package Gardein Chicken Scallopini (Found in the frozen food vegetarian section).
*Alternatively, you can use MorningStar Farms Chik’n Strips, but I prefer the Gardein brand.
1 tbsp olive or sesame oil
½ red bell pepper
½ yellow bell pepper
½ green bell pepper
½ cp chopped onion (any variety)
½ cp diced celery
1 diced apple (any variety)
½ cp Follow Your Heart Vegenaise
1 tbsp Lecithin Granules (optional)
1 tbsp Nutritional Yeast Flakes (optional)
Sea salt and fresh ground black pepper to taste


Heat oil over med-high heat. Add Chik’n Strips and cook for a few minutes to brown each side. Add a few tablespoons of water, cover, and simmer until heated through. Turn off heat and allow to cool. Chop and toss into a bowl with the remaining ingredients.


This recipe is very flexible. Feel free to modify amounts as needed. Double or triple to feed a larger family. Serve on a bed of greens as a salad or serve on a hearty bread for an amazing sandwich. Toss in your favorite spices. A little curry or garlic is nice. Grapes can substitute for the apple.
